Salmon Soba Noodle salad with a lemongrass, chilli, asian dressing.

 

Ingredients ~

Soba noodles 2x bundles from one packet

1 x piece of raw Salmon or 1x Smoked Akaroa Salmon (from the supermarket )

Vegetables -

1 x head of broccoli

1 x bunch of asparagus ( zucchini would be another great option )

1 x handful of cherry tomatoes

2 x handfuls of spinach

1x handful of coriander or basil

2 x spring onion stalks or 1/2 finely sliced small red onion

1 x red chilli (optional if you like extra spice ) or serve fresh on the side

Dressing

4 x large tablespoon of olive oil or sesame oil or 1/4 of a cup

2 x tablespoon of lemon grass from supermarket in tube ( I use gourmet garden )

2 x tablespoons of sweet chilli sauce you can also use Sriracha

3 x tablespoons of rice wine vinegar

2 tablespoons tamari / soy sauce

1x large garlic clove ( optional )

1/2 lemon juice or dash of lime juice (optional if hard to find over Summer )

Garnish

sesame seeds white or black

sushi ginger from the supermarket

red chilli ( if serving on the side )

Method

  1. Turn oven on to 190 °C ( if you are baking the salmon from scratch )

  2. Boil a pot of water for Soba noodles add some salt to water - add Soba noodles following packet instructions.

  3. Place Salmon in a square of tin foil and season lightly with salt & pepper and a dash of olive oil. Wrap up and place in oven - cook for 12 -15 mins.

  4. Wash and cut broccoli into medium size florets / wash and trim asparagus ends or cut zucchini into long slices 1cm thick / cover with olive oil & season with salt + pepper / cook for 15-2o mins while the salmon is cooking.

  5. Wash all other vegetables and cut tomatoes into halves, finely chop spinach and coriander or basil

  6. Once soba noodles are cooked drain and place in salad bowl, use tongs to mix them so they don’t stick together while cooling down.

  7. Place vegetables in salad bowl once soba noodles have cooled.

  8. Take salmon and vegetables out of oven. Place vegetables over salad and break up salmon once cooled ( or use store brought already cooked ) and place over salad.

  9. Make salad dressing and mix or blend together / pour over salad.

  10. Mix salad together with dressing

  11. Chop chilli and finely chop a good pinch of ginger and scatter over top

  12. Sprinkle with sesame seeds and serve.
